In 2005, Christian and Nathalie started a small business, called Nana, Vins & Cie, for which they purchase grapes from trusted farmers, harvested by their team. These grapes are vinified in the same way as their own grapes, in order to produce totally natural wines. In 2007, the company grew to 11 hectares. All work in the vineyard is carried out according to the principles of organic viticulture (with Qualité France certification): no pesticides, insecticides and chemical fertilizers; decoctions of nettle and horsetail are sprayed on the foliage, copper is used in modest quantities (less than 5kg/HA), the vineyards are plowed and the grass is left to grow in the rows. In 2006, the company began its conversion to biodynamic principles.

Their research took them all over the country, to every wine-growing region. In 2002, they settled in the Jasnières / Coteaux-du-Loir, area in the north of Touraine
The company was founded in 2002 by Christian Chaussard, a former soldier and then state engineer, and Nathalie Gaubicher, a Swiss actress with studies in oenology and sommelier, both in love with vineyards and wines. They choose as their location a hilltop village in one of the northernmost areas of the Loire, north of Tours, in Jasnières / Coteaux-du-Loir: the soils are largely clay and silica on a limestone subsoil and Domaine le Briseau is started with 4 hectares of vineyards cultivated mainly with Chenin
Blanc and Pineau d’Aunis. In 2012 the tragic death of Christian, in an accident in the vineyard; Nathalie proves to be a strong and determined woman, albeit of a slim build: she alone continues and, surprisingly, expands the activity of the cellar, continuing in the wake of complete naturalness. Over the last two years, a relationship has been established with the producer Emile Heredià, who supplies part of his Languedoc grapes to produce two natural bubbles, Terret for the SoWhat and Cinsault for the Bubbly.
